I love it when my favorite restaurants up their game and make amazing new changes! The re-imagined Hemingway’s restaurant at Hyatt Regency Grand Cypress’ features cuisine from the places and travels of Ernest Hemingway. Chefs have created dishes with the flavors and aromas of Key West, Cuba and Spain which provide endless inspiration to create modern and updated classic menu selections.

Just in time for the holidays, guests are invited to enjoy the new Taste of Hemingway’s prix-fixe menu Sundays through Thursdays for parties of six or less through Dec. 23, 2019 (not available on Thanksgiving Day, Nov. 28). Reservations are recommended.

The re-imagined restaurant seats 120 guests in a stylish, fresh environment with floor to ceiling windows, multi-level areas for private and group dining, nautical and literary touches and finishes, sleek stone surfaces and metals that blend and reflect Florida’s natural beauty. With an inviting color palate of grey and blue hues with golden accents, guests will feel relaxed as they explore a culinary journey, soak up the last rays of sun and enjoy panoramic nighttime views of private Lake Windsong.

The open concept design elements feature travel-inspired accents including eclectic pendant lighting, three-dimensional wall coverings, inspirational tablescapes, multi-level seating areas and an open chef’s kitchen expo.
