National Chocolate Cake Day – My Favorite Chocolate Cake Recipes

Did you know that today is National Chocolate Cake Day? Well it is!

I really don’t need an excuse to make a chocolate cake, or eat chocolate cake, or even talk about chocolate cake – but today gives us all that and more. Today I’m sharing two of my favorite chocolate cakes. The first is made with a box cake mix, but no one will ever know and the second is super easy to make AND it doesn’t use eggs. So let’s get started!

Double Fudge Fanciful Cake

My mom has been making this amazing cake for as long as I can remember. It is made with boxed cake mix, which makes it super easy, but it is REALLY good. Don’t tell anyone about the boxed cake mix and no one will ever know just how much work you DIDN’T put into this cake.

This makes a 9×12 cake, so it is great for a group or bringing to a party. And for some reason, this cake really is better on the second day. So if you have time, make the cake the day/night before you plan to serve it. Just trust me, it will be better.

This cake turns out very light and has just the right amount of chocolate flavor. What’s even better is that it doesn’t use any eggs, so it’s a great recipe for those days when you just want cake and don’t wanna head out for those missing eggs. It is great for making a cake or cupcakes.

Every time I need to make chocolate cake or cupcakes for part of a recipe, this is my go-to. I’ve turned it into semi-homemade hostess cupcakes, peanut butter cupcakes, double chocolate cake, and even some mini cupcakes for chocolate fondue. I love that 99% of the time I have everything I need in my pantry to make this cake. You should definitely give it a try sometime!
