I love to bake! I can cook and I will on occasion, but I LOVE baking. But even when you love something sometimes you just need a shortcut. I kept seeing this one type of cookie on Pinterest and then had one of those lightbulb moments. I could totally make a semi-homemade version!

The best thing about these cookies is that there isn’t a lot of prep. You measure the ingredients, layer them in a pan, and bake. That’s it! But don’t be fooled by how easy these are, they are SUPER tasty as well.
Peppermint Crunch Dark Chocolate Cake Mix Cookies

These cookies are super easy to make and start with a cake mix! How cool is that? Thanks to the cake mix, these cookies are soft and fudgy… and loaded with sweet Andes peppermint with every bite!

These are a holiday staple in our family. Even in the years when we don’t do a whole lot of baking, these always get made. I’m pretty sure my dad would disown me if I didn’t make him some.
