Have you noticed that berries are popping up all over there place right now? At our local grocery store they are having a Berry Bash and you can get your hands on just about any berry you can imagine this week. When I came into a stash of my own earlier this week I knew I wanted to do something with them other than wash and eat them. I had strawberries, blueberries, and a tub of whipped cream…. SHORTCAKE!
With the Fourth of July coming up I wanted to share this super simple, sweet, and cute treat that you could make for your family or to bring to a party. What do you need?
Strawberries
Blueberries
Sugar
Whipped Topping
Pre-made pound cake
That is it! AND this ends up being a red, white and blue dessert as well.
The first thing you need to do is cut up your berries and toss them in a bowl with a bit of sugar. My mom likes a lot of juice with her berries, but me, not so much. I put just enough sugar in the bowl to get a little bit of juice and flavor going.
For the cake part I decided to go with the Entenmann’s butter loaf cake because it was a) BOGO at the grocery store and I was able to get a marble cake the throw in the freezer for later and b) it happened to be right in the front of the store.
I wanted to make these in individual cups which worked out perfectly because you can use the cup to cut the cake into the perfect size to fit in them. Cool huh? If you don’t want solid rounds you could also cut the cake in small cubes.
Once you have your berries and you cake prepped you can start putting your shortcake together. Cake, berries, whipped topping, repeat. It’s as simple as that!
These are an easy, simple, and super tasty summer time treat that you can whip up in no time. If you don’t want to go the individual serving route you could always make this in a loaf pan (just cut the cake into layers that fit the pan) or make it like a trifle. Whatever route you chose it will be pretty and delicious!
