Pumpkin Spice Coffee Cocktail

Like much of the US, I tend to go a little nutso about pumpkin stuff in the fall. Even though I’m not a big coffee drinker I am a big fan of iced pumpkin spice lattes. So when I got some of the new Barnie’s CoffeeKitchen BREWSTICKS I decided to try and make my own iced pumpkin spice latte. THEN I got the brilliant idea to make it into a cocktail. Sounds fun huh?

To start you need to make some pumpkin spice syrup. Combine 1/2 cup brown sugar, 1/2 cup water, and 1 tablespoon pumpkin pie spice in a small pan. Heat and stir until the sugar has dissolved completely. Let it cool, strain into a container, and keep it in a sealed container for up to two weeks in the fridge.

Pumpkin Spice Coffee Cocktail

Here is what you need for your cocktail:

6 oz soy or almond milk

4 oz coffee – made using Hazelnut BREWSTICKS

2 tbls pumpkin spice syrup

2 oz marshmallow vodka

Fill a shaker with ice and add all your ingredients. Give it a hearty shake! Pour into a martini glass. To make it a little more festive I rimmed the glass with orange sugar. You could also use a cinnamon sugar mixture to give your drink a little extra kick.
