My Whole30 Journey: Week 3

Day 15

The halfway point! I got up this morning and headed to the grocery store to pick up what I needed for this week. Sleeping in more than I planned to and grocery shopping meant that I had brunch instead of breakfast or lunch today. I made some scrambled eggs with salsa and paired it with a chile lime chicken burger I picked up at Trader Joe’s yesterday. Yum yum!

I made another breakfast casserole for this week and prepped the veggies for dinner. I really enjoyed the taco skillet I made last week and decided to go ahead and make it again. I like that it makes enough for 3 meals. It gives me leftovers for tomorrow and another container in case life gets in the way and I don’t want to cook.

Day 16 & 17

My Whole30 Journey: Week 3

Pretty uneventful, which I think is good. Started my days with my breakfast casserole and ended with a homecooked meal. I think I’ve really gotten used to eating this way which is nice. I can definitely see myself keeping many parts of this way of eating in the long run. But it was a bit rough going to run club, which starts and ends at a brewery, and not having a beer. Especially after running 2 miles in the rain. Oh well. I came home, had some water, and wrote a blog post instead.

Day 18

Man alive does a super long and busy work day kill my desire to cook. All I wanted to do when I got home was lay on the couch. Or crawl into bed. If I hadn’t been so hungry when I got home from work (late) I probably WOULD have crawled into bed. Thankfully I had some chicken apple sausage in the fridge, pair that with steam in bag carrots and some beets and I had quite the circle-centric meal.

Day 19

One of the BIGGEST thing I’ve learned from Whole30 is all of the bad eating habits that I, and probably you, have. For instance, when you’ve had a really long stressful day at work the last thing you wanna do is cook right? You start thinking about where you can stop on the way home and pick something up for dinner. It doesnt matter that you have a fridge full of good for you food and a meal plan waiting for you at home, you just don’t wanna deal with prep, cooking, and washing dishes. Am I right?

I’ve pretty much felt this way ALL week long. Thankfully instead of throwing in the towel I just altered my meal plan a bit of fixed dinners that were super quick and easy. Lunches filled with random leftovers have been a staple this week, but at least I’ve stuck with the Whole30 plan.

Day 20

I really should just put “See yesterday’s post” here since that is exactly how I felt again today. It was a VERY long week and – hooray Friday! Didn’t wanna cook, didn’t wanna wash dishes, hell, I didn’t want to do anything. SO what DID I do? I made up a quick batch of Tex Mex Chicken Salad and ate that. It was quick, filling, and super tasty.

Day 21

How is it day 21??!! I must say that at the beginning of the week I really felt like “How has it only been 2 weeks?!” But today I can’t believe that it is almost the end of week 3. It’s just craziness. I had the last of my breakfast casserole for breakfast and made sure to work on my meal plan for this week. Dinner was Chile Lime Chicken burger (from Trader Joes) topped with tomato and salsa verde, served with a baked sweet potato and a side of pineapple. I put FRUIT on my shopping list for tomorrow because its summer time and I love watermelon!

Day 22

My Whole30 Journey: Week 3

I made two pretty amazing new dishes today and it made me pretty happy! I had a Sweet Potato and Chorizo Frittata to eat for breakfast the next couple of days and Shepard’s Pie (made with sweet potatoes) for dinner.

I’m still kind of in shock that I’ve only got a week left of Whole30.
