From Pinterest to Project: Crock Pot Chili

Over the weekend I got a craving for chili. It was probably because we had a “cold front” here in Florida and the weather was AMAZING. As soon as it cools down even the littlest bit I start craving cold weather food. So Sunday night I did a search on Pinterest for crock pot chili recipe that I could make on Monday. I came across a recipe for Easy Crock Pot Chili on South Your Mouth. Monday after work I headed to the store to get everything that I needed. And then… I cooked!

I stuck to the recipe except I used water instead of beer. The only reason I did this was because I didn’t have a can (or bottle) or beer on hand and I wasn’t going to be a 6 pack just for 1. The author said that using water was fine, so I went for it. The biggest issue I had was that I didn’t have a pan big enough to cook all the meat and onions at one time, so I had to cook it in two batches.

Once I cooked all meat and onions it was just a matter of throwing all the ingredients in the crock pot and letting it cook for a couple hours. Normal chili recipes don’t require cooking it for very long once it is all together, so even though the recipe called for cooking it on high for 5-6 hours I only let it go about 2 hours before I ate some. After that I let it go another 3 hours on low.

It was delish! I am a wuss so it definitely wasn’t spicy, but you could use the HOT chili mix to give it a bit more kick. Or maybe even up the amount of red pepper flakes that you add. Either way, I think it is an easy recipe that you will enjoy. Just don’t forget to add some sour cream and shredded cheese to your bowl of chili before you eat it 🙂
