For my 2nd From Pinterest to Projects project I decided to do something I little different. I decided to try out a recipe. I was bored and made some cupcakes but then I wanted to make something else. I started going through my boards on Pinterest and found a cookie recipe I wanted to try (more on that later) and a recipe for a Chickpea and Tomato salad. I’ve been on a bit of a tomato kick lately, so I thought this was a great recipe to try. Since I had to run to the store to get a couple things for the cookie recipe I decided to get the rest of what I needed for the salad and give it a try for dinner. I followed the recipe exactly except for two small changes. I’m not a huge fan of basil, so I opted to use just a bit of dried basil instead of a whole bunch of fresh. Also, the only honey I had on hand was Key Lime honey, so I used that instead of regular honey. Holy cow was that an awesome decision on the honey! I think I could put that dressing on just about anything and it would taste good.
Once the salad had done it’s thing in the fridge for 20 minutes (okay, maybe it was more like 30 minutes because I got distracted), I decided to serve it up on a bed of lettuce to make more of a meal out of it.
All in all I can say this was a success. I think next time I might add some cucumbers or throw some avocado on top before serving. Just something green to spice things up a bit. I love that I can just throw this together in like 5 minutes and then have something tasty AND healthy to eat. There is enough of the salad for at least two more meals. It might even be good mixed in with some pasta or something.
