Toasted Coconut + Cashew Nutchello Cocktail

I haven’t had milk in my house in probably 10 years now since dairy and I don’t always get along. But my mom makes these great cocktails, her take on a white russian, that use milk. I love them but after a couple of them my tummy isn’t feeling so hot. Bummer right?

Then I found Nutchello. Nutchello is made by Silk and is a nut-based beverage. I first heard of it from the coupon flier that showed up in my mailbox. Then the following week Target had it 50% off with the Cartwheel app. I figured this was the perfect time to try it and picked up the Toasted Coconut + Cashew flavor. It was amazing!

Toasted Coconut + Cashew Nutchello Cocktail

In addition to being free of dairy, soy, lactose, gluten, casein and carrageenan, it is also verified by the Non-GMO Project’s product verification program, has no artificial colors, flavors or funny business (their words), and has only 80 calories per serving.

Nutchello is perfectly wonderful on its own when you need a “milk like” drink, but I started to think about all the other fun ways I could use it. Then it hit me that it would be PERFECT for a cocktail. All the flavors meant you didn’t need to add a million other things to it to make a tasty drink. Just two simple ingredients!

Toasted Coconut + Cashew Nutchello Cocktail

3 oz Toasted Coconut + Cashew Nutchello (or your favorite Nutchello flavor)

1 oz Coconut Rum (I used Wicked Dolphin Coconut Rum because it is made in Florida & is super yummy)

Add your ingredients to a shaker of ice and shake it up! Pour into a low ball glass with some ice and you are all set! If you want to have a little bit more fun with your drink, you could throw all your ingredients in a blender and whip up a frozen cocktail.

And there you have it folks – a super simple and delicious cocktail with only 2 ingredients and just 80 cocktails. Perfect for a weeknight or a girls night in!
