Since today is the last day of Whole30 (how is it the last day already?!) I thought I would share a few of my favorite recipes. I have probably cooked more in the last month than I have in the last 2 years. I know, I’m horrible, but its true.
My aunt shared this recipe with me and I loved it! I actually ended up making it every week. Its easy to make, full of veggies, super tasty, and makes a bunch! Great if you are single and need leftovers or if you have a hungry spouse.
Shepherd’s Pie with Sweet Potato Topping
I am a huge fan of Shepherd’s Pie. Usually mine is topped with white potatoes and cheese, but this stuff was an amazing replacement. The sweet potato topping gave it a little sweetness that was a nice twist. Again, lots of leftovers that reheat really well.
Paleo Chorizo Sausage Sweet Potato Frittata with Caramelized Onions
Oh my heavens this was amazing! After the first week of Whole30 I wasn’t sick of having eggs everyday for breakfast, I was sick of getting up and COOKING eggs everyday. So for the second week I made a breakfast casserole that lasted the whole week and I could heat up every day. I did that for 2 weeks and then I found this recipe. It was SO amazing that I ended up eating it for breakfast and dinner the second day. It should have lasted four days, but it only made it three days because it was so good.
Harvest Chicken Skillet with Sweet Potatoes Brussels Sprouts and Sautéed Apples
This was one of the last full meals that I made on Whole30. It was a bit more prep than some of the other meals I’ve made, but it was totally worth it. I even got to have bacon! I love brussel sprouts and these were a great way to enjoy them.
