Every year when my birthday rolls around my mom doesn’t even have to ask what cake I want. I always want the same thing – Strawberry Brownie Cake. It is the most amazing and tasty thing EVER!
Strawberry Brownie Cake
1 Family size brownie mix, or 2 small bags of mix that make 8 x 8 pans
½ cup COLD water
1 small instant Vanilla pudding mix
4-6 oz cool whip
14oz sweetened condensed milk
1 quart strawberries, halved lengthwise
Semi-sweet chocolate for drizzle
Instructions
Grease two 8”round cake pans. We like to use the metal throwaway kind because it is easier to get them out after baking.
Make Cake LIKE brownies as instructed on mix. Let cool ans remove from pans. (You can also make the brownies ahead of time and freeze them)
In large bowl mix condensed milk and water. Beat in pudding mix (with mixer on low) 1 minute. Chill 5-8 minutes till just firm.
Fold in whipped topping, then chill additional 5-10 minutes until firm.
Layer cake as follows:
First cake layer topped with ½ of filling mixture. Add strawberries, in circles around layer, UP SIDE DOWN. Place the strawberries FLAT side up so the cake holds together better. Put a tad more of filling over that to help hold next layer.
Second cake layer topped with remaining filling mixture. Top with strawberries, right side up this time, and drizzle with chocolate.
**We put 6” skewers in the cake around the edges to help it all hold together as it tends to slide.
It takes a bit of effort to put this cake together, but it is SO worth it. It will be the hit of any party or gathering you attend.
