Family Favorites Friday – Christmas Jello Poke Cake

When Christmas time rolls around that is one thing that you will always see on the dessert table, my mom’s famous jello cake. This happens to also be my grandpa’s favorite cake so sometimes it even makes a special appearance around his birthday.

This cake is as pretty as it is tasty. Just make sure to set aside some time to put this all together. It takes a little bit of work, but it is totally worth it in the end.

Ingredients

1 white cake mix

1 3 oz package raspberry jello

1 3 oz package lime jello

1 4 oz instant vanilla pudding mix

1/4 cup powdered sugar

1 cup cold milk

1 8 oz container cool whip

Directions:

Prepare cake mix as directed in 2 eight or 9 inch cake pans. Cool completely.

Place layers in two clean pans. Prick each layer all over with a utility fork or skewer at 1/2″ intervals.

Dissolve each flavor jello in 1 cup of boiling water.

Using an eyedropper, fill holes in each layer with the liquid jello. Put the raspberry in one layer and lime in the other.

For frosting: Combine pudding mix, sugar, and milk in a small bowl. Beat on low about one minute. Cool in refrigerator for 10 minutes. Fold in cool whip, chill 10 more minutes.

Place first layer on a plate, frost, then refrigerate layer and remaining frosting for 5 minutes. Add second layer and frost entire cake. Refrigerate before serving.
