Eating Healthy Is Easy with Publix

Even though I’m not currently doing Whole30, I still use some of my favorite Whole30 recipes on a regular basis. Today I am sharing a quick and easy recipe that is super tasty, healthy, and leaves plenty of leftovers for lunch.

I found the original recipe on Pinterest and only had to make one change to make the recipe Whole30 – remove the cheese. But if you aren’t doing Whole30 this totally isn’t necessary. I also switch out the ground beef for ground turkey, which is just a personal preference.

I was able to get all the supplies I needed for this recipe on my weekly grocery shopping trip to Publix. I was also able to pick up some of their tea from the deli and some ready to go salads thanks to their BOGO specials. Every week when their ad comes out I always check the BOGO specials first. I was able to get everything I needed for this recipe, two salads for lunches, a gallon of tea, and even treated myself to some Halo Top for dessert – all for under $20. I think this is great especially since I will get three meals out of this recipe.

Whole30 Taco Skillet

Ingredients

1 lb lean ground turkey
2 cloves garlic, minced
1 yellow and/or 1 red bell pepper, chopped
1 large zucchini, quartered and sliced
½ red onion, diced
1 can of diced Fire Roasted Tomatoes, drained
1 tsp oregano
1 tsp onion powder
2 tsp chili powder
Instructions
  1. In a 12″ skillet, break up and brown ground turkey, drain excess fat once turkey is browned (if necessary).
  2. Add in veggies and seasonings and cook until onions are translucent.

It is that easy!

This makes a couple large servings, so it’s great to make on a Sunday night to have a couple lunches for the week.

    I have been on and off whole 30 myself but always gluten free year round due to celiac. 🙁 This recipe sounds delicious. I will have to check it out

    My goal right now is to cook more meals at home. One of my staple recipes is turkey bolognese. I serve it either with regular pasta, brown rice pasta, or carrot noodles depending on what sounds good.

    My favorite healthy go to recipe is a whole head of cauliflower boiled, mashed with ghee and sea salt. Then I add a half cup of frozen green peas and cover it and take off the heat for about 10 minutes. It’s delicious!
